Ingredients

  • 28 oz can Canned crushed tomatoes crushed
  • 4 cups Vegetable broth
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 tbsp Olive oil
  • 1/2 cup Heavy cream optional
  • 1/4 cup Fresh basil chopped
  • 1 tsp Sugar
  • Salt to taste
  • Black pepper to taste

Method
 

Preparation
  1. Sauté chopped onion and minced garlic in olive oil until softened.
  2. Add crushed tomatoes, vegetable broth, and sugar, then bring the mixture to a simmer.
Cooking
  1. Cook for 20-25 minutes, then blend the soup until it is smooth.
  2. Stir in heavy cream and fresh basil, then season with salt and pepper.
  3. Heat the soup gently before serving.

Notes

Serve hot with a swirl of cream and a fresh basil leaf garnish.
