  • 1 lb ground turkey Lean protein option
  • 2 medium sweet potatoes, peeled and cubed Ensure even cubes for consistent roasting
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 whole bell pepper, chopped
  • 1 teaspoon paprika
  • to taste salt and pepper

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Toss cubed sweet potatoes with olive oil, salt, and pepper, and spread on a baking sheet. Roast for 25-30 minutes or until tender.
Cooking
  1. In a skillet, heat a little olive oil over medium heat. Add onion and cook until translucent.
  2. Add garlic and bell pepper, cooking for a few more minutes.
  3. Add ground turkey, paprika, salt, and pepper; cook until turkey is browned and cooked through.
Serving
  1. Serve the turkey mixture over the roasted sweet potatoes, topped with fresh spinach or kale if desired.

Notes

If leftovers remain, store in an airtight container in the refrigerator for about 3-4 days. For longer storage, freeze the turkey mixture and sweet potatoes separately for up to 3 months.
