Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 1 cup apples, peeled and chopped
  • 1/2 cup chopped walnuts or pecans optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the chopped apples and nuts if using.
Baking
  1. Pour the batter into the prepared pan and smooth the top.
  2. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  3. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Great on its own or with vanilla ice cream or whipped cream. Dusting with powdered sugar gives it a pretty touch. Store in an airtight container for up to three days, or wrap tightly and refrigerate for up to a week. Can freeze slices for up to three months.
