  • 2 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 1 Large egg
  • 1 cup Milk
  • 1 tsp Vanilla extract
  • 2 Apples, peeled, cored, diced (e.g., Granny Smith or Honeycrisp)
  • 4 cups Vegetable oil for frying
Glaze
  • 1.5 cups Powdered sugar
  • 2 tbsp Milk
  • 1/2 tsp Vanilla extract

Method
 

Preparation
  1. In a large bowl, whisk together flour, granulated sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk the egg, milk, and vanilla extract.
  2. Add the wet ingredients to the dry ingredients, mixing until just combined. Gently fold in the diced apples.
Frying
  1. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Carefully drop spoonfuls of batter into the hot oil, ensuring not to overcrowd the pot.
  2. Fry for 2-3 minutes per side, or until golden brown and cooked through. Remove fritters with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
Glazing
  1. While the fritters cool slightly, whisk together powdered sugar, milk, and vanilla extract in a shallow bowl until smooth. Dip each warm fritter into the glaze, turning to coat evenly.
