Ingredients
  

For the Shrimp
  • 1 lb shrimp (peeled and deveined)
  • 1/4 cup cilantro (chopped)
  • 1/4 cup lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 8 small tortillas (corn or flour)
For the Slaw
  • 4 cups coleslaw mix
  • 1/2 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey

Method
 

Marination and Cooking
  1. In a bowl, mix the shrimp, cilantro, lime juice, olive oil, garlic, salt, and pepper. Marinate for about 15-20 minutes.
  2. Heat a pan over medium heat. Add the marinated shrimp and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through.
Preparing Slaw and Tortillas
  1. In another bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, and honey. Toss until everything is well mixed.
  2. Warm the tortillas in a separate pan for a few seconds on each side or wrap them in a damp cloth and microwave for about 30 seconds.
Assembling Tacos
  1. Place a few shrimp on each tortilla.
  2. Top with the creamy slaw.
  3. Offer extra lime wedges on the side for some added zest.

Notes

For added heat, include some diced jalapeƱos in the slaw. Feel free to use different protein like chicken or fish. Store leftovers separately in airtight containers; shrimp lasts 2-3 days, slaw 1-2 days.
