Cookies
- In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- Beat in the large eggs one at a time, ensuring each is fully incorporated, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt; gradually add the dry ingredients to the wet mixture, mixing until just combined to form a dough.
- Chill the dough in the refrigerator for at least 30 minutes, then preheat your oven to 375°F (190°C).
- On a lightly floured surface, roll out the chilled dough to about ¼-inch thickness and use cookie cutters to create desired shapes.
- Place cookies on baking sheets lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden, then transfer to a wire rack to cool completely.
Frosting
- For the frosting, beat the softened butter until creamy, then gradually add the sifted powdered sugar until smooth and well combined.
- Mix in the almond extract and 2-3 tablespoons of milk or heavy cream until the desired consistency is reached; incorporate food coloring if you wish.
- Once the cookies are completely cool, spread an even layer of frosting on each and decorate with sprinkles as desired before serving.
Notes
Ensure butter is softened for a smooth dough. Do not overbake to keep the cookies soft. Let cookies cool completely before frosting.
