Almond Frosting
  • ½ cup Unsalted butter softened
  • 3-4 cups Powdered sugar sifted
  • 1 tsp Almond extract
  • 2-3 tbsp Milk or heavy cream
  • Red and green food coloring optional
  • Sprinkles optional

Method
 

Cookies
  1. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  2. Beat in the large eggs one at a time, ensuring each is fully incorporated, then mix in the vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt; gradually add the dry ingredients to the wet mixture, mixing until just combined to form a dough.
  4. Chill the dough in the refrigerator for at least 30 minutes, then preheat your oven to 375°F (190°C).
  5. On a lightly floured surface, roll out the chilled dough to about ¼-inch thickness and use cookie cutters to create desired shapes.
  6. Place cookies on baking sheets lined with parchment paper and bake for 8-10 minutes, or until the edges are lightly golden, then transfer to a wire rack to cool completely.
Frosting
  1. For the frosting, beat the softened butter until creamy, then gradually add the sifted powdered sugar until smooth and well combined.
  2. Mix in the almond extract and 2-3 tablespoons of milk or heavy cream until the desired consistency is reached; incorporate food coloring if you wish.
  3. Once the cookies are completely cool, spread an even layer of frosting on each and decorate with sprinkles as desired before serving.

Ensure butter is softened for a smooth dough. Do not overbake to keep the cookies soft. Let cookies cool completely before frosting.
