  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Method
 

Making the Cookies
  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Beat in the egg and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms.
  5. Divide the dough in half, flatten each half into a disk, wrap in plastic, and chill for at least 30 minutes.
  6. On a lightly floured surface, roll out one disk of dough to about 1/4-inch thickness and cut into desired shapes using cookie cutters.
  7. Place cookies on baking sheets lined with parchment paper and bake in a preheated oven at 375°F (190°C) for 8-10 minutes, or until edges are lightly golden.
  8. Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely, then decorate as desired.

Notes

These cookies are great for decorating with royal icing or sprinkles. Ensure the butter is at room temperature for best results.
