Preparation
- In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract thoroughly.
- Scoop about 2 tablespoons of the yogurt mixture onto a parchment paper-lined baking sheet to form clusters, making about 10 clusters.
- Place the baking sheet in the freezer and freeze for 1-2 hours until completely solid.
Chocolate Coating
- Melt the chocolate by adding chocolate chips and coconut oil to a microwave-safe bowl, microwaving in 15-30 second intervals while stirring until fully melted.
- Remove the frozen yogurt clusters from the freezer and carefully dip each one in the melted chocolate, using a spoon for even coating.
- Place the coated clusters back on the prepared baking sheet. Optional: Sprinkle a little sea salt on top.
- Return the clusters to the freezer for a few minutes to let the chocolate harden.
Notes
Store clusters in an airtight container in the freezer for about 1 month, separating layers with parchment paper. Served best straight out of the freezer.
