Ingredients
  

Dry Ingredients
  • 1 cup Kodiak Cakes protein pancake mix
  • 1/4 cup cocoa powder Unsweetened preferred.
  • 1/2 cup chocolate protein powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup Greek yogurt
  • 1/2 cup milk (or any milk alternative)
  • 1/4 cup honey or maple syrup
  • 2 pieces eggs Can substitute with flax eggs for a vegan option.
  • 1 tsp vanilla extract
Optional Ingredients
  • 1/2 cup chocolate chips Can be omitted or replaced with nuts or dried fruit.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, mix together the Kodiak Cakes mix, cocoa powder, chocolate protein powder, baking powder, and salt.
  3. In another bowl, whisk together the yogurt, milk, honey (or maple syrup), eggs, and vanilla until smooth.
  4. Combine the wet ingredients with the dry ingredients and stir until just combined.
  5. Fold in chocolate chips if using.
  6. Divide the batter evenly among the muffin cups.
Baking
  1. Bake for 15-20 minutes or until a toothpick comes out clean.
  2. Let cool and enjoy your healthy chocolate muffins!

Notes

These muffins are great on their own but can also be enjoyed with almond butter or honey on top. Store in an airtight container for up to 3 days, or freeze for longer storage.
