Prepare and Cook
- In a large pot, bring chicken broth to a simmer; add chicken and cook until no longer pink, then shred.
- Add ginger, garlic, soy sauce, and sesame oil to the broth, then bring to a boil.
- Stir in egg noodles, carrots, bok choy, and mushrooms, cooking until vegetables are tender and noodles are al dente.
- Return shredded chicken to the pot, heat through, and serve hot, garnished with green onions.
Notes
For an extra kick, add a dash of chili oil before serving.
