  • 1 medium Yellow onion diced
  • 1 packet Chili seasoning (or 2 tbsp)
  • 1 can Diced tomatoes (14.5 oz), undrained
  • 1 can Kidney beans (15 oz), drained and rinsed
  • 1 can Tomato sauce (8 oz)
  • 32 oz Frozen tater tots
  • 2 cups Shredded cheddar cheese

Preparation
  1. Preheat oven to 375°F (190°C). In a large skillet, brown ground beef and diced onion over medium heat until no pink remains, then drain any excess grease.
  2. Stir in chili seasoning, diced tomatoes, drained kidney beans, and tomato sauce. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld.
  3. Pour the chili mixture into a 9x13 inch baking dish, spreading it evenly. Arrange the frozen tater tots in a single layer over the chili.
  4. Bake for 25-30 minutes, or until the tater tots are golden brown and crispy.
  5. Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  6. Let the casserole stand for a few minutes before serving to allow it to set.

Notes

For a spicier kick, add diced jalapeños to the chili mixture. Garnish with sour cream, green onions, or extra cheese before serving.
