Method
 

  1. Preheat oven: Set oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare batter: In a mixing bowl, beat eggs and sugar with an electric mixer until thick and pale. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold dry ingredients into the egg mixture until just combined.
  3. Bake: Spread the batter evenly on the lined baking sheet. Bake for 12–15 minutes, or until the cake springs back when touched.
  4. Roll and cool: Turn the baked cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment paper and roll the cake (with the towel) from the short end. Let cool completely.
  5. Make filling: Whip heavy cream with powdered sugar and vanilla until soft peaks form.
  6. Assemble: Unroll the cooled cake, spread whipped cream evenly inside, and roll it back up without the towel. Place seam-side down on a serving platter.
  7. Decorate: Frost the outside with more whipped cream. Garnish with chocolate shavings or powdered sugar for a tree-bark look.
  8. Serve: Slice and enjoy your festive Yule Log Cake!
