For the Bowl Assembly
  • 2 cups cooked rice Use any type of rice or quinoa.
  • 2 pieces chicken breasts, grilled and sliced Marinate beforehand for more flavor.
  • 1 cup cucumber, diced Choose fresh cucumber for crunch.
  • optional Olive oil For drizzling on top.
  • to taste Vegetables (e.g., cherry tomatoes, red onion, lettuce) for topping Customize to your liking.

Method
 

Prepare Tzatziki Sauce
  1. In a bowl, mix the Greek yogurt, minced garlic, lemon juice, dill, salt, and pepper to create the tzatziki sauce.
Cook Rice and Chicken
  1. Cook the rice according to package instructions.
  2. Grill the chicken breasts until fully cooked, then slice them.
Assemble the Bowls
  1. In a serving bowl, layer the cooked rice, sliced chicken, and diced cucumber.
  2. Drizzle tzatziki sauce over the top and add any additional vegetables you desire.
  3. Serve with a drizzle of olive oil if desired.

Notes

For extra flavor, marinate the chicken in olive oil, lemon juice, and herbs before grilling. Make the tzatziki sauce a few hours ahead of time to let the flavors blend. Use brown rice or quinoa for a healthier option. Feel free to mix in other vegetables like bell peppers or olives for added crunch. Leftovers can be stored in an airtight container for up to 3 days.
