Ingredients
  

Marinade
  • 1/4 cup olive oil Extra virgin is preferred.
  • 1/4 cup plain yogurt For marinating the chicken.
  • 2 tablespoons lemon juice Freshly squeezed is best.
  • 4 cloves garlic, minced Adds flavor to the marinade.
  • 1 tablespoon paprika Gives color and flavor.
  • 1 tablespoon ground cumin Classic Middle Eastern spice.
  • 1 tablespoon ground coriander Enhances flavor profile.
  • to taste salt and pepper Adjust according to preference.
Main Ingredients
  • 2 pounds chicken breast, cut into cubes Can substitute with boneless thighs.
  • as needed Wooden skewers (soaked in water if using) Prevents burning on the grill.

Method
 

Marinating the Chicken
  1. In a large bowl, combine olive oil, yogurt, lemon juice, garlic, paprika, cumin, coriander, salt, and pepper.
  2. Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, ideally overnight.
Grilling
  1. Preheat your grill to medium-high heat.
  2. Thread the marinated chicken onto soaked wooden skewers.
  3. Grill the skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serving
  1. Serve the grilled skewers on a platter with fresh veggies like lettuce, tomatoes, and cucumbers.
  2. Warm pita bread is great for wrapping the chicken, making it easy to enjoy as a sandwich.
  3. Offer dips, like garlic sauce or tahini, alongside for extra flavor.

Notes

For best results, marinate the chicken overnight. Adjust spices according to taste. If using other meats, consider lamb or beef for variety.
