- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and diced onion, cooking until softened.
- Add ground chicken, breaking it apart with a spatula, and cook until no longer pink.
- Stir in the diced bell pepper, mushrooms, soy sauce, lime juice, ginger, salt, and pepper. Cook for another 5-7 minutes until the vegetables are tender.
- Remove from heat and let cool slightly.
- Scoop the chicken mixture into individual lettuce leaves, garnish with chopped green onions and cilantro, then serve immediately.
Notes
Serve fresh with additional toppings for variety. Store any leftovers in the fridge for up to 3 days, keeping lettuce separate to avoid sogginess. Can customize proteins and vegetables.
