  • 2 cups cooked chicken, shredded You can use rotisserie chicken for convenience.
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup cooked rice Brown rice can be used for added fiber.
  • 1 cup diced tomatoes
  • 1 cup salsa Can substitute with diced tomatoes and hot sauce if necessary.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, black beans, corn, rice, diced tomatoes, salsa, cumin, chili powder, salt, and pepper. Mix well.
  3. Transfer the mixture to a greased baking dish and spread it out evenly.
  4. Top with shredded cheese.
Cooking
  1. Bake in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
Serving
  1. Garnish with chopped cilantro before serving. Enjoy your healthy chicken burrito casserole!

Notes

For extra flavor, marinate the chicken in taco seasoning before cooking. You can also make a vegetarian version by omitting the chicken and adding more beans or vegetables like bell peppers and zucchini. Leftovers can be stored in an airtight container for 3-4 days or frozen for up to 2-3 months.
