  • 2 pieces chicken breasts Cooked and shredded
  • 1 can black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 1 piece bell pepper, diced
  • 1 cup corn (frozen or canned)
  • 1 cup salsa
  • 1 packet taco seasoning
  • 1 cup cheese (shredded)
  • Fresh cilantro for garnish Optional

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the chicken breast until fully cooked and shredded.
  3. In a large bowl, combine the shredded chicken with black beans, cooked brown rice, diced bell peppers, corn, salsa, and taco seasoning.
  4. Spread the mixture in a greased casserole dish.
  5. Top with cheese and cilantro.
Cooking
  1. Bake for 25-30 minutes until heated through and cheese is bubbly.

Notes

Serve warm on its own or with tortilla chips, avocado slices, and optional toppings like sour cream or guacamole. For storage, let cool to room temperature, cover tightly, and keep in the refrigerator for up to 3 days. Freeze for up to 3 months.
