  • 0.25 cups red onion, sliced For added sharpness
  • 0.5 cups shredded cheese Cheddar or mozzarella recommended
  • 0.5 cups BBQ sauce For drizzle over the salad

Method
 

Preparation
  1. Grill the chicken breasts until cooked through and slightly charred. Allow them to rest before slicing into strips.
  2. In a large bowl, combine mixed greens, cherry tomatoes, corn, and red onion.
  3. Add the sliced chicken on top of the salad mixture.
  4. Drizzle BBQ sauce and ranch dressing over the salad.
  5. Toss gently to combine all ingredients.
  6. Top with shredded cheese and serve immediately.
