Making the Cookies
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper for easy cleanup.
- In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and light brown sugar until the mixture is light and fluffy.
- Beat in the large egg, pure maple syrup, and vanilla extract until all ingredients are well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined, then gently fold in the white chocolate chips.
- Drop rounded tablespoons of cookie dough onto the prepared baking sheets, ensuring they are spaced about 2 inches apart.
- Bake for 10-12 minutes, or until the cookie edges are set and lightly golden, but the centers remain soft.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, ensure your butter is softened but not melted. Do not overbake these cookies to keep them wonderfully chewy.
