  • 1 can Crushed tomatoes 28-ounce
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 8 ounces Fresh mozzarella cheese sliced
  • 0.25 cup Parmesan cheese grated
  • 0.25 cup Fresh basil chopped

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Season chicken breasts generously with salt and pepper.
  2. In an oven-safe skillet or baking dish, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 30 seconds.
  3. Stir in crushed tomatoes, oregano, basil, salt, and pepper. Bring the sauce to a simmer, then reduce heat and let it cook for 5 minutes.
  4. Place the seasoned chicken breasts into the simmering sauce, ensuring they are mostly covered. Top each chicken breast with several slices of fresh mozzarella.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the mozzarella is bubbly and golden brown.
  6. Remove the dish from the oven, then sprinkle with grated Parmesan cheese and fresh chopped basil. Serve immediately.

Notes

For extra flavor, you can brown the chicken breasts for a few minutes per side before adding the sauce and baking.
