Preparation
- Preheat oven to 375°F (190°C). Season chicken breasts generously with salt and pepper.
- In an oven-safe skillet or baking dish, heat olive oil over medium heat. Sauté minced garlic until fragrant, about 30 seconds.
- Stir in crushed tomatoes, oregano, basil, salt, and pepper. Bring the sauce to a simmer, then reduce heat and let it cook for 5 minutes.
- Place the seasoned chicken breasts into the simmering sauce, ensuring they are mostly covered. Top each chicken breast with several slices of fresh mozzarella.
- Bake for 20-25 minutes, or until the chicken is cooked through and the mozzarella is bubbly and golden brown.
- Remove the dish from the oven, then sprinkle with grated Parmesan cheese and fresh chopped basil. Serve immediately.
Notes
For extra flavor, you can brown the chicken breasts for a few minutes per side before adding the sauce and baking.
