  1. Slice zucchini lengthwise into 1/2-inch thick 'steaks' and pat them dry with paper towels; then season both sides evenly with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat, add zucchini in a single layer, and cook for 3-4 minutes per side until golden brown and tender-crisp.
  3. Remove the skillet from heat, sprinkle the minced garlic over the zucchini, then generously top each zucchini steak with shredded mozzarella and grated Parmesan cheese.
  4. Place the skillet under a preheated broiler for 1-2 minutes, watching carefully, until the cheese is bubbly and melted.
  5. Garnish the cheesy garlic zucchini steaks with fresh chopped parsley and serve immediately.

Notes

Ensure zucchini is sliced evenly for consistent cooking. You can use any melty cheese you prefer, such as cheddar or provolone, in place of mozzarella.
