Preparation
- Preheat your oven to 350°F (175°C). Wash the apples and remove the cores, creating a hollow space in the center of each apple.
Cheesecake Filling
- In a bowl, beat the softened cream cheese, sugar, and vanilla together until smooth.
- Add the egg and mix well. Then stir in the graham cracker crumbs and ground cinnamon until everything is combined.
Stuffing and Baking
- Spoon the cheesecake filling into the hollowed apples.
- Place them in a baking dish and bake for about 25-30 minutes, or until the apples are tender.
- If using, drizzle caramel sauce on top right before serving.
Notes
Serve the baked apples warm with a dollop of whipped cream or vanilla ice cream for an extra special treat. Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply pop them in the microwave until warm.
