  • 4 large large apples (Granny Smith or Honeycrisp) Choose apples that hold their shape well when baked.
  • 8 oz cream cheese, softened Make sure it's softened for easy mixing.
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 large egg Room temperature preferred.
  • 1/2 cup graham cracker crumbs For the cheesecake texture.
  • 1 teaspoon ground cinnamon Add more for extra flavor.
  • Caramel sauce, for drizzling Optional topping.

Preparation
  1. Preheat your oven to 350°F (175°C). Wash the apples and remove the cores, creating a hollow space in the center of each apple.
Cheesecake Filling
  1. In a bowl, beat the softened cream cheese, sugar, and vanilla together until smooth.
  2. Add the egg and mix well. Then stir in the graham cracker crumbs and ground cinnamon until everything is combined.
Stuffing and Baking
  1. Spoon the cheesecake filling into the hollowed apples.
  2. Place them in a baking dish and bake for about 25-30 minutes, or until the apples are tender.
  3. If using, drizzle caramel sauce on top right before serving.

Notes

Serve the baked apples warm with a dollop of whipped cream or vanilla ice cream for an extra special treat. Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, simply pop them in the microwave until warm.
