Ingredients

  • 2 cups grated carrots
  • 2 cups diced apples
  • 1/2 cup raisins
  • 1/4 cup chopped walnuts optional
Dressing
  • 1/3 cup plain yogurt
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine grated carrots, diced apples, raisins, and chopped walnuts (if using).
  2. In a small bowl, mix together yogurt, honey, lemon juice, and a pinch of salt and pepper.
  3. Pour the dressing over the salad and toss until well combined.
  4. Serve chilled.

Notes

For a lovely presentation, serve in a large bowl or individual cups. Store any leftovers in an airtight container in the refrigerator; best eaten within 2-3 days.
