- In a large bowl, combine grated carrots, diced apples, raisins, and chopped walnuts (if using).
- In a small bowl, mix together yogurt, honey, lemon juice, and a pinch of salt and pepper.
- Pour the dressing over the salad and toss until well combined.

Notes
For a lovely presentation, serve in a large bowl or individual cups. Store any leftovers in an airtight container in the refrigerator; best eaten within 2-3 days.
