Cajun Guacamole Shrimp Cups

Ingredients
  

Guacamole
  • 3 large Avocados ripe
  • 2 tbsp Lime juice
  • 1/4 cup Red onion finely diced
  • 1/4 cup Cilantro chopped
  • 1 small Jalapeño seeded and minced (optional)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
Cajun Shrimp
  • 1 lb Shrimp peeled and deveined, tails off
  • 1 tbsp Cajun seasoning
  • 1 tbsp Olive oil
For the Cups
  • 24 Wonton wrappers

Method
 

Prepare the Guacamole
  1. In a mixing bowl, mash the ripe avocados until mostly smooth. Stir in the lime juice, diced red onion, chopped cilantro, minced jalapeño (if using), salt, and pepper until well combined.
Cook the Cajun Shrimp
  1. Toss the peeled shrimp with Cajun seasoning until evenly coated. Heat olive oil in a skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque.
Assemble the Cups
  1. Preheat oven to 350°F (175°C). Press each wonton wrapper into the cups of a mini muffin tin. Bake for 5-7 minutes, or until lightly golden and crispy.
  2. Carefully remove the crispy wonton cups from the muffin tin. Fill each cup with a spoonful of the prepared guacamole, then top with 1-2 pieces of cooked Cajun shrimp. Serve immediately, garnished with extra cilantro if desired.

Notes

For extra crunch, lightly toast the wonton wrappers in the oven before filling. A drizzle of hot sauce can add an extra kick!
