  • 2 tablespoons Cajun seasoning Adjust to taste
For the Pasta
  • 8 ounces pasta (fettuccine or penne) Cook according to package instructions
  • 1 cup heavy cream For a lighter version, use half-and-half
  • 1 tablespoon olive oil For cooking chicken
  • 1 piece bell pepper, sliced Add other vegetables if desired
  • 1 piece onion, chopped Use fresh for best flavor
  • 2 cloves garlic, minced Freshly minced preferred

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat.
  3. Season the chicken breasts with Cajun seasoning, then add to the skillet.
  4. Cook until golden and cooked through, approximately 5-7 minutes per side.
  5. Remove and let rest before slicing.
Cooking
  1. In the same skillet, add onion, bell pepper, and garlic; sauté until softened.
  2. Add heavy cream and stir, bringing it to a simmer. Season with salt and pepper.
  3. Add the cooked pasta to the skillet, tossing to coat everything in the sauce.
Serving
  1. Remove from heat, slice the chicken, and serve it over the pasta.
  2. Garnish with Parmesan cheese and fresh parsley before serving.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for 3-4 days. Reheat with a little extra cream for moisture. Adjust the amount of Cajun seasoning to taste.
