Ingredients
  

Pasta and Filling
  • 12 large large pasta shells
  • 1 pound chicken breast, cooked and diced Use rotisserie chicken for quicker preparation.
  • 1 cup grated Parmesan cheese
  • 2 cups heavy cream
  • 1 tablespoon Cajun seasoning Adjust to taste for spiciness.
Toppings and Seasoning
  • 2 tablespoons olive oil For cooking the chicken.
  • 1 cup shredded mozzarella cheese For topping.
  • to taste Salt and pepper
  • as needed Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Cook the pasta shells according to package instructions and set aside.
Cooking
  1. In a skillet, heat the olive oil over medium heat. Add the cooked chicken and Cajun seasoning, cooking until warmed through.
  2. Stir in the heavy cream and Parmesan cheese, cooking until the sauce thickens slightly. Season with salt and pepper.
  3. Fill each pasta shell with the Cajun chicken Alfredo mixture and place them in a greased baking dish.
  4. Top with shredded mozzarella cheese.
  5. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
Serving
  1. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave. Cook pasta shells al dente, as they will continue to cook in the oven.
