Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter and powdered sugar together until creamy.
- Add the vanilla extract and mix well.
- Gradually add the flour and salt, mixing until well combined.
- Stir in the chopped pecans.
- Roll the dough into small balls, about 1 inch in size, and place them on the prepared baking sheet.
- Bake for 10-12 minutes, or until the bottoms are lightly golden.
- Remove from the oven and let them cool for a few minutes.
- Roll the warm cookies in powdered sugar until well coated.
- Allow them to cool completely before serving.
Notes
Store cookies in an airtight container at room temperature for about a week. For longer storage, freeze them in a freezer-safe container with layers of parchment paper between cookies; they can last up to three months.
