  • 1 cup Peanut butter creamy
  • 1/2 cup Butter unsalted, melted
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract
Chocolate Topping
  • 1 1/2 cups Semi-sweet chocolate chips
  • 1 tbsp Shortening or coconut oil

Method
 

Preparation
  1. Line a 9x13 inch baking dish with parchment paper, ensuring an overhang on the sides for easy removal.
Make Peanut Butter Layer
  1. In a large saucepan, melt the butter and peanut butter over low heat until smooth, then remove from heat.
  2. Stir in the powdered sugar and vanilla extract until well combined and a thick dough forms, then press the mixture evenly into the prepared baking dish.
Make Chocolate Topping
  1. In a microwave-safe bowl, melt the chocolate chips and shortening or coconut oil together, stirring in 30-second intervals until smooth.
  2. Pour the melted chocolate evenly over the peanut butter layer and spread with a spatula.
Chill and Serve
  1. Refrigerate the fudge for at least 2 hours, or until completely firm.
  2. Once firm, use the parchment paper to lift the fudge from the pan and cut into small squares to serve.

Notes

For easier cutting, use a hot knife. Store the fudge in an airtight container in the refrigerator.
