  • 0.5 cup Unsalted butter softened
  • 1 cup Light brown sugar packed
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 1.5 cups Mashed ripe bananas about 3-4 medium
  • 0.5 cup Buttermilk
Cream Cheese Frosting
  • 8 oz Cream cheese softened
  • 0.25 cup Unsalted butter softened
  • 3 cups Powdered sugar
  • 1 tsp Vanilla extract

Method
 

Brown Sugar Banana Cake
  1. Preheat oven to 350°F (175°C) and grease a 9-inch round baking pan. Line the bottom with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and packed brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and mashed bananas, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean. Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.
Cream Cheese Frosting
  1. In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating until smooth, then mix in the vanilla extract.
Assembly
  1. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

Ensure your bananas are very ripe with plenty of brown spots for the best flavor and moisture. Do not overmix the batter once the wet and dry ingredients are combined to keep the cake tender.
