Preparation
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- In a large bowl, whisk together the eggs, milk, salt, and pepper until they are well combined.
- Layer half of the thawed hash browns, crumbled sausage, diced onion, and bell pepper evenly in the prepared baking dish.
- Sprinkle half of the shredded cheese over the first layer of ingredients.
- Repeat the layering process with the remaining hash browns, sausage, onion, bell pepper, and cheese.
- Carefully pour the whisked egg mixture evenly over all the layers in the baking dish.
- Bake for 45-55 minutes, or until the casserole is set and golden brown, and a knife inserted into the center comes out clean.
- Allow the casserole to stand for 5-10 minutes before slicing and serving.
Notes
This casserole can be assembled the night before and refrigerated. If baking from cold, add an extra 10-15 minutes to the baking time.
