  • 12 large eggs
  • 1 cup milk
  • 1 lb cooked breakfast sausage, crumbled
  • 30 oz frozen hash browns, thawed
  • 2 cups shredded cheddar cheese
  • 1/2 onion, diced
  • 1/2 green bell pepper, diced
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper until they are well combined.
  3. Layer half of the thawed hash browns, crumbled sausage, diced onion, and bell pepper evenly in the prepared baking dish.
  4. Sprinkle half of the shredded cheese over the first layer of ingredients.
  5. Repeat the layering process with the remaining hash browns, sausage, onion, bell pepper, and cheese.
  6. Carefully pour the whisked egg mixture evenly over all the layers in the baking dish.
  7. Bake for 45-55 minutes, or until the casserole is set and golden brown, and a knife inserted into the center comes out clean.
  8. Allow the casserole to stand for 5-10 minutes before slicing and serving.

Notes

This casserole can be assembled the night before and refrigerated. If baking from cold, add an extra 10-15 minutes to the baking time.
