Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the minced garlic, chopped rosemary, chopped thyme, olive oil, lemon juice, salt, and pepper to create a marinade.
  3. Place the leg of lamb in a roasting pan and rub the marinade all over the meat, ensuring it gets into any crevices.
  4. Allow the lamb to marinate for at least 1 hour or overnight in the fridge for more flavor.
Cooking
  1. Roast the lamb in the preheated oven for about 1.5 to 2.5 hours, or until reaching the desired doneness (internal temperature of 145°F for medium-rare).
  2. Let the lamb rest for 15 minutes before carving.
