Preparation
- Pound chicken breasts to 1/2-inch thickness. Set up a breading station with flour, seasoned eggs, and a breadcrumb-Parmesan mixture.
- Dredge each chicken cutlet in flour, then egg, and finally coat thoroughly with the breadcrumb mixture.
Cooking
- Heat olive oil in a large skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 3-4 minutes per side.
- Transfer fried chicken to a baking dish. Spoon marinara sauce over each cutlet, then top with slices of fresh mozzarella and a sprinkle of Parmesan.
- Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly.
Serving
- Garnish with fresh basil and serve immediately.
Notes
