Bobby Flay's Chicken Parmesan

A classic Italian-American dish, Bobby Flay's Chicken Parmesan features crispy, pan-fried chicken cutlets topped with rich tomato sauce and melted mozzarella and Parmesan cheeses, then baked to perfection.

Ingredients
  

Chicken
  • 4 Boneless, skinless chicken breasts
  • 1/2 cup All-purpose flour
  • 2 Large eggs
  • 1 cup Breadcrumbs (panko recommended)
  • 1/4 cup Grated Parmesan cheese
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Olive oil for frying
Sauce & Cheese
  • 2 cups Marinara sauce
  • 8 oz Fresh mozzarella, sliced
  • 1/4 cup Grated Parmesan cheese for topping
  • 2 tbsp Fresh basil, chopped for garnish

Method
 

Preparation
  1. Pound chicken breasts to 1/2-inch thickness. Set up a breading station with flour, seasoned eggs, and a breadcrumb-Parmesan mixture.
  2. Dredge each chicken cutlet in flour, then egg, and finally coat thoroughly with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a large skillet over medium-high heat. Fry chicken until golden brown and cooked through, about 3-4 minutes per side.
  2. Transfer fried chicken to a baking dish. Spoon marinara sauce over each cutlet, then top with slices of fresh mozzarella and a sprinkle of Parmesan.
  3. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until cheese is melted and bubbly.
Serving
  1. Garnish with fresh basil and serve immediately.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the marinara sauce. Serve with pasta or a side salad.
