  • 2 pieces ripe bananas Use very ripe bananas for the best flavor.
  • 1 cup blueberries (fresh or frozen) No need to thaw frozen blueberries before adding.
  • 1/3 cup melted butter Can be substituted with applesauce for a healthier option.
  • 1 cup sugar Can be reduced for a healthier version.
  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour Can be partially substituted with whole wheat flour.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and stir.
  6. Add the flour and gently mix until just combined.
  7. Fold in the blueberries.
  8. Pour the batter into the greased loaf pan.
Baking
  1. Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Slice the bread and serve warm or at room temperature. Add butter or honey for extra sweetness. Store tightly wrapped for up to 2 days at room temperature or a week in the refrigerator. Can be frozen for up to 3 months.
