Ingredients
  

Pasta and Vegetables
  • 8 oz pasta Use any pasta shape you prefer.
  • 2 cups cherry tomatoes, halved
  • 1 cup lettuce, chopped You can use romaine or any leafy lettuce.
Dressing
  • 1/2 cup mayonnaise Greek yogurt can be used for a healthier option.
  • 1 tbsp vinegar Apple cider or white vinegar works well.
  • Salt and pepper to taste
Main Protein
  • 4 slices bacon, cooked and chopped Turkey bacon can be used for a leaner option.

Method
 

Preparation
  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooled pasta, bacon, cherry tomatoes, and lettuce.
  3. In a separate bowl, mix together the mayonnaise, vinegar, salt, and pepper.
  4. Pour the dressing over the pasta mixture and toss to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad is best enjoyed cold. If it becomes dry after storage, add a bit more mayonnaise or dressing before serving.
