  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

  • 2 tablespoons rice vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Spread the shelled edamame on a baking sheet and roast for 15-20 minutes, or until slightly crispy.
Combine Ingredients
  1. In a large bowl, combine the roasted edamame, cherry tomatoes, cucumber, red onion, and cilantro.
Make Dressing
  1. In a small bowl, whisk together olive oil, rice vinegar, salt, and pepper.

Notes
