Preparation
- Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
- For the crust, combine flour, sugar, and cold butter pieces in a bowl until crumbly.
- Press the crust mixture evenly into the bottom of the prepared baking pan and bake for 15 minutes, then remove from oven.
- While the crust bakes, prepare the filling by mixing chopped rhubarb, sugar, flour, egg, and vanilla extract in a medium bowl.
- For the streusel topping, combine flour, sugar, and cold butter pieces in another bowl until a crumbly mixture forms.
Baking & Cooling
- Pour the rhubarb filling over the partially baked crust and sprinkle the streusel topping evenly over the filling.
- Return the pan to the oven and bake for an additional 30-35 minutes, or until the streusel is golden brown and the filling is bubbly.
- Allow the rhubarb bars to cool completely in the pan on a wire rack before cutting into squares and serving.
Notes
For best results, ensure the rhubarb is fresh and firm. Do not overbake to keep the bars moist.
