  • 1/2 cup cold butter cut into pieces
Rhubarb Filling
  • 3 cups chopped rhubarb
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 teaspoon vanilla extract
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup cold butter cut into pieces

Equipment

  • 9x13 inch baking pan
  • Mixing bowls
  • Wire rack

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking pan.
  2. For the crust, combine flour, sugar, and cold butter pieces in a bowl until crumbly.
  3. Press the crust mixture evenly into the bottom of the prepared baking pan and bake for 15 minutes, then remove from oven.
  4. While the crust bakes, prepare the filling by mixing chopped rhubarb, sugar, flour, egg, and vanilla extract in a medium bowl.
  5. For the streusel topping, combine flour, sugar, and cold butter pieces in another bowl until a crumbly mixture forms.
Baking & Cooling
  1. Pour the rhubarb filling over the partially baked crust and sprinkle the streusel topping evenly over the filling.
  2. Return the pan to the oven and bake for an additional 30-35 minutes, or until the streusel is golden brown and the filling is bubbly.
  3. Allow the rhubarb bars to cool completely in the pan on a wire rack before cutting into squares and serving.

Notes

For best results, ensure the rhubarb is fresh and firm. Do not overbake to keep the bars moist.
