  • 8 oz pasta Any type of pasta can be used.
  • 1 lb ground beef You can use pre-cooked ground beef for a quicker meal.
  • 1 packet taco seasoning Adjust spice level according to preference.
  • 1 can diced tomatoes No need to drain.
  • 1 cup beef broth Beef broth enhances flavor.
  • 1 can corn, drained Adds sweetness and texture.
  • 1 cup shredded cheese Use more for a creamier texture.
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Method
 

Cooking
  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Stir in taco seasoning, diced tomatoes, beef broth, and corn.
  3. Add pasta and bring to a boil.
  4. Reduce heat and simmer for about 10-12 minutes, or until pasta is cooked through.
  5. Stir in shredded cheese until melted and creamy.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Thaw overnight in the fridge before reheating. You can add veggies like bell peppers or onions for more nutrition.
