  • 1 lb ground turkey Lean turkey for low carb options.
  • 1 cup cauliflower florets
  • 1 cup diced zucchini
  • 1 cup diced bell peppers Any color bell pepper works.
  • 1 cup shredded cheese Use cheddar or mozzarella.
  • 1 can diced tomatoes With or without seasoning.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for cooking Use as needed.

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and add ground turkey. Cook until browned.
  3. Add cauliflower, zucchini, and bell peppers to the skillet. Cook until the vegetables are tender.
  4. Stir in diced tomatoes, garlic powder, onion powder, salt, and pepper.
  5. Transfer the mixture to a casserole dish and top with shredded cheese.
  6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  7. Let it cool slightly before serving.

Notes
