- Preheat oven to 375°F (190°C). Dice sweet potatoes and zucchini, chop onion, and mince garlic.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook until browned, then drain fat. Add onion and garlic, cooking until softened.
- Stir in cumin, chili powder, smoked paprika, salt, and pepper. Add diced sweet potatoes and zucchini to the skillet, mixing well.
- Pour in chicken broth and bring to a simmer. Cover the skillet and bake for 20-25 minutes, or until sweet potatoes are tender.
- Remove cover, sprinkle with shredded mozzarella cheese, and bake uncovered for another 10-15 minutes, or until the cheese is melted and bubbly.
- Let the bake rest for a few minutes before serving.
Notes
For an extra layer of flavor, try adding a sprinkle of fresh cilantro or parsley before serving. You can also customize the spices to your liking.
