  • 2 medium Sweet Potatoes peeled and diced
  • 2 medium Zucchini diced
  • 1 small Yellow Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Olive Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 0.5 tsp Smoked Paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 0.5 cup Chicken Broth
  • 0.5 cup Shredded Mozzarella Cheese

Instructions
  1. Preheat oven to 375°F (190°C). Dice sweet potatoes and zucchini, chop onion, and mince garlic.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook until browned, then drain fat. Add onion and garlic, cooking until softened.
  3. Stir in cumin, chili powder, smoked paprika, salt, and pepper. Add diced sweet potatoes and zucchini to the skillet, mixing well.
  4. Pour in chicken broth and bring to a simmer. Cover the skillet and bake for 20-25 minutes, or until sweet potatoes are tender.
  5. Remove cover, sprinkle with shredded mozzarella cheese, and bake uncovered for another 10-15 minutes, or until the cheese is melted and bubbly.
  6. Let the bake rest for a few minutes before serving.

Notes

For an extra layer of flavor, try adding a sprinkle of fresh cilantro or parsley before serving. You can also customize the spices to your liking.
