Preparation
- Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a large bowl, mix together the rolled oats, chopped nuts, and salt.
Cooking
- In a saucepan over low heat, combine honey, nut butter, brown sugar, and vanilla extract, stirring until smooth.
- Pour the mixture over the dry ingredients and stir until well combined. Add chocolate chips or dried fruit if desired.
- Press the mixture into the prepared baking pan evenly.
- Bake for 20-25 minutes or until golden brown.
- Allow to cool completely before cutting into bars.
Notes
Store in an airtight container at room temperature for up to a week, in the fridge for up to two weeks, or freeze for up to three months. Wrap each bar in plastic wrap or foil before freezing.
