  • 1 cup nuts (e.g., almonds or walnuts), chopped
  • 1/2 cup brown sugar
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup honey or maple syrup Maple syrup makes it vegan.
  • 1/2 cup nut butter (e.g., peanut butter or almond butter) Ensure nut butter is suitable based on allergies.
  • 1/2 teaspoon vanilla extract
Optional Ingredients
  • 1/2 cup chocolate chips or dried fruit Add if desired.

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a large bowl, mix together the rolled oats, chopped nuts, and salt.
Cooking
  1. In a saucepan over low heat, combine honey, nut butter, brown sugar, and vanilla extract, stirring until smooth.
  2. Pour the mixture over the dry ingredients and stir until well combined. Add chocolate chips or dried fruit if desired.
  3. Press the mixture into the prepared baking pan evenly.
  4. Bake for 20-25 minutes or until golden brown.
  5. Allow to cool completely before cutting into bars.

Notes

Store in an airtight container at room temperature for up to a week, in the fridge for up to two weeks, or freeze for up to three months. Wrap each bar in plastic wrap or foil before freezing.
