  • 0.25 tsp ground cloves
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 0.75 cup light brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
Mix-ins
  • 1 cup candied mixed fruit
  • 0.5 cup raisins
  • 0.5 cup chopped pecans

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves, then set aside.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar with an electric mixer until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined. Fold in the candied mixed fruit, raisins, and chopped pecans until evenly distributed.
Baking
  1. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are set.
  2. Remove the cookies from the oven and let them cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

For an extra festive touch, dust the cooled cookies with powdered sugar or drizzle with a simple glaze.
