Ingredients
  

For the Pancakes
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup milk
  • 1/4 teaspoon salt
For the Cheese Filling
  • 1 cup ricotta cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sugar adjust sweetness as preferred
  • 1 teaspoon vanilla extract
For Frying and Serving
  • butter Butter for frying
  • powdered sugar Powdered sugar for serving

Method
 

Preparation
  1. In a bowl, whisk together flour, eggs, milk, and salt until smooth. Let the batter rest for 30 minutes.
Cooking the Pancakes
  1. Heat a non-stick skillet over medium heat and add a little butter.
  2. Pour a small amount of batter into the skillet, swirling to coat the bottom.
  3. Cook until the edges are lightly golden, then flip and cook briefly on the other side.
Making the Filling and Assembling
  1. In a separate bowl, mix ricotta, cream cheese, sugar, and vanilla.
  2. Place a spoonful of cheese filling on each blintz, fold in the sides, and roll up.
Frying
  1. Fry the filled blintzes in butter until golden brown.
Serving
  1. Serve warm, dusted with powdered sugar. Optionally, add fresh fruit or preserves.

Notes

Let the batter rest for at least 30 minutes for a smoother texture. Use a non-stick skillet to prevent sticking. Adjust the filling's sweetness to your liking.
