Ingredients
  

For the Filling
  • 1 lb ground beef Use lean ground beef to reduce fat.
  • 1 can green enchilada sauce Reserve half for topping.
  • 8 pieces corn tortillas Warm them before filling.
  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to mix different types of cheese.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
For Garnish
  • Fresh cilantro For garnishing before serving.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef with the diced onion, garlic, cumin, chili powder, salt, and pepper until the meat is browned. Drain excess fat if necessary.
  3. Add half of the green enchilada sauce to the beef mixture and stir.
  4. Warm the tortillas in a dry pan or microwave until soft.
  5. Spoon the beef mixture into each tortilla, roll them up, and place them seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with shredded cheese.
Baking
  1. Bake in the preheated oven for about 20 minutes, or until the cheese is melted and bubbly.
  2. Garnish with fresh cilantro before serving.

Notes

Serve hot with side dishes like rice, beans, or salad. Add toppings like sour cream, guacamole, or extra salsa for added flavor. For make-ahead options, assemble and refrigerate overnight, then bake the following day. Use red enchilada sauce if green isn't available. For slow cooker method, layer ingredients and cook on low for 4-6 hours.
