Ingredients

  • 4 pieces chicken thighs
  • 1 cup rice white or brown
  • 1 cup BBQ sauce
  • 2 cups chicken broth can substitute with water or vegetable broth
  • 1 cup mixed vegetables optional, can add during last cooking step
  • Salt and pepper to taste
  • 2 tablespoons olive oil for browning chicken

Method
 

Preparation
  1. Heat olive oil in a large pan over medium heat.
  2. Season the chicken thighs with salt and pepper and brown them in the pan for about 5 minutes on each side.
  3. Remove the chicken and set it aside.
Cooking
  1. In the same pan, add rice and stir for a minute.
  2. Pour in the BBQ sauce and chicken broth, and mix well.
  3. Add the chicken back to the pan, cover, and let it simmer for 25-30 minutes until the rice is cooked and the chicken is tender.
  4. Stir in mixed vegetables if using, and cook for an additional 5 minutes.

Notes

For extra flavor, marinate the chicken thighs in BBQ sauce for a few hours or overnight before cooking. You can use other kinds of chicken, like breasts or drumsticks, but adjust the cooking time accordingly. If you like a little kick, add some hot sauce or red pepper flakes to the BBQ sauce. To store, let it cool and refrigerate in an airtight container for 3-4 days or freeze for up to 3 months. Thaw completely before reheating.
