Ingredients
  

Cake
  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 1 tsp Ground cinnamon
  • 0.5 tsp Ground nutmeg
  • 0.5 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Packed light brown sugar
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 1.5 cups Mashed ripe bananas about 3-4 medium
  • 0.25 cup Buttermilk
Spiced Vanilla Buttercream
  • 1 cup Unsalted butter, softened
  • 4 cups Powdered sugar
  • 1 tsp Vanilla extract
  • 0.5 tsp Ground cinnamon
  • 0.25 tsp Ground nutmeg
  • 2-4 tbsp Milk or cream

Method
 

For the Banana Cake
  1. Preheat oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it, or lining with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mashed bananas and buttermilk until evenly distributed.
  7. Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely before frosting.
For the Spiced Vanilla Buttercream
  1. In a large bowl, beat the softened butter with an electric mixer until creamy.
  2. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  3. Stir in the vanilla extract, cinnamon, and nutmeg.
  4. Add milk or cream one tablespoon at a time until the desired consistency is reached.
  5. Once the cake is completely cooled, spread the spiced vanilla buttercream evenly over the top.

Notes

For extra moisture, ensure your bananas are very ripe with plenty of brown spots.
