For the Banana Cake
- Preheat oven to 350°F (175°C) and prepare a 9x13 inch baking pan by greasing and flouring it, or lining with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg; set aside.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the mashed bananas and buttermilk until evenly distributed.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely before frosting.
For the Spiced Vanilla Buttercream
- In a large bowl, beat the softened butter with an electric mixer until creamy.
- Gradually add the powdered sugar, one cup at a time, beating well after each addition.
- Stir in the vanilla extract, cinnamon, and nutmeg.
- Add milk or cream one tablespoon at a time until the desired consistency is reached.
- Once the cake is completely cooled, spread the spiced vanilla buttercream evenly over the top.
Notes
For extra moisture, ensure your bananas are very ripe with plenty of brown spots.
