  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for quicker preparation.
  • 1 cup shredded cheese Any preferred cheese can be used.
  • 1 cup taco seasoning
  • 12 pieces taco-sized tortillas For a healthier option, use whole wheat or low-carb tortillas.
  • 1 cup salsa
  • 1 cup diced tomatoes
  • Lettuce, for topping
  • Sour cream, for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the shredded chicken with taco seasoning and salsa.
  3. In a separate bowl, combine the shredded cheese and diced tomatoes.
  4. Take a tortilla, fill it with the chicken mixture, and sprinkle the cheese-tomato mixture on top.
  5. Place the filled tortillas in a baking dish and repeat until all tortillas are filled.
Baking
  1. Bake in the oven for about 15-20 minutes until the tortillas are crispy and the cheese is melted.
Serving
  1. Serve these baked chicken tacos hot from the oven with lettuce and sour cream on top.

Notes

Let leftovers cool completely first and store in an airtight container in the fridge for up to 3 days. To reheat, warm them in the oven at 350°F (175°C).
