Ingredients
  

For the potato mixture
  • 2 cups mashed potatoes Leftover mashed potatoes work great
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 1/4 cup milk
  • 1 large egg
  • Salt and pepper to taste
For coating
  • 1/2 cup breadcrumbs
  • Oil for spraying or brushing

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, flour, milk, egg, salt, and pepper. Mix until well combined.
  3. Scoop out portions of the mixture and form them into small puffs or balls.
  4. Roll each puff in breadcrumbs to coat them.
  5. Place the puffs on the prepared baking sheet and lightly spray or brush them with oil.
Baking
  1. Bake for 20-25 minutes until golden brown and crispy.

Notes

Serve warm, either plain or with dipping sauces like sour cream, ketchup, or ranch dressing. For extra flavor, add herbs like chives or parsley to the potato mixture. You can add cooked bacon bits or chopped veggies for added texture and flavor.
