- In a large skillet, heat sesame oil over medium heat.
- Add minced garlic and ginger, and sauté until fragrant.
- Add ground turkey, cooking until browned and cooked through.
- Stir in mixed vegetables and cook until tender.
- Add cooked rice and soy sauce, mixing well to combine.
- Push the rice mixture to the side, and if using, pour the beaten egg into the skillet. Scramble until cooked, then mix into the rice.
- Stir in green onions, and season with salt and pepper.
- Serve hot.
Notes
To store leftovers, let cool to room temperature, transfer to an airtight container, and refrigerate for up to 3-4 days. Can freeze for up to 2 months. For added spice, include red pepper flakes or sriracha sauce.
