  • 1 cup edamame, shelled Frozen edamame can be used; thaw and drain before use.
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon paprika Feel free to try different spices like garlic powder or chili powder.

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine the chickpeas and edamame.
  3. Drizzle with olive oil, salt, and paprika; toss to coat evenly.
  4. Spread the mixture on a baking sheet.
Cooking
  1. Roast for 20-25 minutes or until crispy, stirring halfway through for even cooking.
  2. Let cool slightly before serving.

Notes

This dish is great on its own, but can also be served with dips like hummus or tahini. To store leftovers, keep them in an airtight container in the fridge for up to three days. If you want to maintain crispiness, consume fresh or reheat in the oven.
